History
The stroopwafel was invented in the early nineteenth century in Gouda. It is believed that bakers used dough scraps to bake thin waffles and then filled them with syrup. Because bakers made stroopwafels from leftover dough, the waffles were very cheap and were therefore called “poor man’s cookies.”
It is claimed that the baker Gerard Kamphuisen from Gouda was the first to make waffles filled with syrup. However, these were siroopwafels (note the letter i), which are still made today in the Kamphuisen syrup waffle factory in Gouda. His product likely laid the foundation for the modern stroopwafel recipe.
Over the years, stroopwafels have become a popular street food in the Netherlands. At local markets and festivals, you can find stalls selling freshly baked stroopwafels, often prepared in front of the customer, adding to the experience.
Ingredients
The ingredients of stroopwafels are simple but essential for their characteristic taste and texture. The main components are:
- Dough: Flour, butter, sugar, eggs, and yeast form the base of the dough. This dough is baked in a waffle iron to create thin, crispy waffles, which are then sliced in half to add the syrup filling.

Coffee tradition: What’s better than a stroopwafel? A warm stroopwafel! In the Netherlands, it’s a tradition to place a stroopwafel on top of your hot drink, like coffee or tea. The warmth makes the syrup filling soft and melting, which perfectly complements the crispy waffles. You can also warm the stroopwafel in the microwave for the same delicious effect.
Stroopwafels in space: In 2018, Dutch astronaut André Kuipers brought stroopwafels to the International Space Station (ISS). This made stroopwafels the first Dutch food eaten in space.
Dutch People: Dutch people eat an average of 20 stroopwafels per year.
A siroopwafel is different from a stroopwafel: A stroopwafel consists of a waffle that is sliced in half after baking, with syrup in between. A siroopwafel consists of two separately baked crispy waffles with a thick syrup in between, which has a different composition than the syrup in a stroopwafel.
